The production of our olive oil Extra Istrian is made in a way that is completely different. In the time when everyone is forcing varietal olive oil, we have decided to make a blend of different varieties (made from Buža, Istarska Bjelica, Leccino and Pendolino) to achieve aperfect balance.
Each variety is harvestedat it`s optimal ripeness, and is then processed on the day of harvesting in only the best oil mills.
After a while, when the oil settles we decant it and mix the single varieties into a harmonious blend with optimal ratio.
We create a blend which emphasizes the best characteristics of each variety.
We have decided to make a modern label for our oil and introduce it to a wider audience.
Our plan is to expand our olive grove, work on further improvement of our product and winning awards all over the world.
